Vegetable Spotlight: Cabbage

It’s warm outside and with most schools out for the year, it is feeling like summer is finally, officially here.

This long-awaited warm weather is bringing with it the return of farmers markets and abundant opportunities to try new vegetables, as well as prepare some of your standard favorites in new ways.

Each week this summer, we’re going to spotlight a vegetable and share some recipes from Pinterest that we hope will inspire you to either try the food or prepare it in a fun new way.

Today’s spotlight vegetable is CABBAGE!

Cabbage (Brassica oleracea) is a leafy green, white or purple multi-layered vegetable. It is closely related to broccoli, cauliflower, and brussels sprouts. Cabbage is a good source of vitamin K, vitamin C and dietary fiber. It has extremely low glycemic index (10) and glycemic load (0.58) and cabbage – at least white cabbage – is also very economic as it is inexpensive and compact making it last for many meals.

Try it in these delicious-sounding dishes. You can see them all on our Vegetable Spotlight board on Pinterest:

Cheddar Cabbage Casserole from Taste of Home

Garlic Rubbed Roasted Cabbage Steaks from Everyday Maven

Easy Chinese Cabbage Salad from MomSpark

Toasted Quinoa and Cabbage Salad from PopSugar Fitness

Crisp Tuna Cabbage Salad from The Kitchn

Apple Cole Slaw from Allrecipes.com

Please comment below and let us know if you have any awesome cabbage recipes and/or you try one of these!
